Virginia Peanut PieĀ Recipe

Peanuts in the United States
Peanuts are grown in the Southern United States, Georgia accounting for 42% of US peanut product. In addition to Southeastern states such as Virginia and North Carolina, peanuts are also grown in Texas, Oklahoma, and New Mexico. In the United States there are four main types of peanuts: Runner (the most common), Virginia (make up the majority of peanuts roasted in-shell), Spanish (grown in Texas and Oklahoma), and Valencia (very sweet and primarily grown in New Mexico).
Virginia Peanut Pie
Although there is also a Georgia peanut pie, Virginia peanut pie seems to be more common. In fact, the Virginia Diner in Wakefield, Virginia is known for serving Virginia peanut pie. Although I looked at available recipes online, I used my own approach to making chess pies to develop my peanut pie recipe.
Although using Virginia peanuts to make a Virginia peanut pie and perhaps Runner peanuts to make a Georgia peanut pie would be the most appropriate, Spanish peanuts have the most oil and are said to have the most peanut flavor. So, I decided to use Spanish peanuts for my Virginia peanut pie.
I decided to use a combination of honey and brown sugar in my peanut pie because those two sweeteners are often used in recipes for honey roasted peanuts. Although I am sure that sugar and / or corn syrup, often used in modern pecan pie recipes, would make a good pie, I used my own recipe for pecan pie without corn syrup as inspiration to develop a different combination of sweeteners. In addition, I did not want to use just brown sugar as in my pecan pie recipe: in my opinion, it does not make sense to have two recipes that are almost the same.
Learning how to make peanut pie is easy. As with any chess pie, all you have to do is measure the peanut pie ingredients, pour them into a bowl, mix, and then put the filling into an unbaked pie shell. Although my baking time is a bit complicated, a simple 350 degrees Fahrenheit for 45 minutes would make a wonderful pie. Virginia Peanut Pie Recipe
Ingredients
- 1 1/2 cups raw Spanish peanuts, with skin, salted (170g)
- 1/2 raw honey (170g)
- 1/2 light brown sugar (120g)
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1, 9-inch unbaked pie shell
Instructions
- 1. Use fingers to break apart about 1/2 of peanuts
- 2. Warm honey in the microwave on HIGH for 30 seconds so that it can be stirred more easily
- 3. Mix ingredients in large bowl
- 4. Pour into an unbaked, 9-in pie shell
- 5. BAKE: 350 F, uncovered, 35 minutes; 325 F, covered, 25 minutes; 300 F, covered, 15 minutes
